From the precious pomace of Nero d'Avola with which the extraordinary reds of the Milazzo Winery are produced, we obtain the Vera Grappa di Nero d'Avola by Milazzo. The distillation is artisanal and discontinuous, in copper stills, with direct steam. The result is a "raw" grappa which, "cut" and cold-filtered to best preserve all the aromas, takes on a clear appearance and offers a balanced and round bouquet.

The Vera Grappa di Nero D'Avola by Milazzo is a Sicilian grappa produced from the pomace of Nero D'Avola. It is distilled with a steam method using steam boilers. Perfect gift idea: the bottle is screen-printed in gold and packaged in an elegant red cardboard case.

Pomace: selection of fine Nero d'Avola pomace from the Milazzo winery. From Nero d'Avola, a typical Sicilian vine characteristic of our area, a great wine is obtained, with a fine aroma and intense flavour, which acquires value with ageing.

Fermentation: The pomace extracted from the must for the production of red wines is then stored in steel vats for a few months, starting from the time of the first racking, waiting to be distilled.

Distillation: Old master distillers, whose artisan tradition has been handed down from father to son, distill the pomace using small steam boilers. It is a discontinuous distillation with the cutting of the heads and tails. Distillation takes place very slowly to allow the volatile components to evaporate correctly and consequently condense in order to enhance the aromas and characteristics of Nero d'Avola. The distillation is done in a discontinuous system with eight copper stills, with direct steam to produce a "raw" grappa at about 75% alcohol, the final alcohol content (45°) will be reached with a subsequent cut and final cold filtration in a to ensure the preservation of the aromatic component.

Rest: Twelve months in steel tanks.
