Classification- Typical Geographical Indication Sicily (IGT).

Soil - Mixed type, traces of sand.
Altitude- From 250 to 350 meters msl.
Vineyards- Upward-trained, high density of plants per hectare (over 4,000) and low yield (50 - 60 hl/ha).
Climate- Mild winters with very dry springs and summers.
Vintage- By hand, from the 2nd to 4th week of September.
Vinification- Very soft pressing of the grapes. Only the first pressing must is used. Slow fermentation at 16° - 17° C for about 15 days and then long lees contact.
Ageing- At controlled temperature up to spring to favor the natural clarification.
Maturing- For at least two months in bottle at controlled temperature.
Colour - pale yellow with greenish highlights.
Aroma - intense, delightfully fruity, with character.
Flavour - fresh, balanced and persistent. Same scents perceived by the nose.
Alcohol content- 12.5 v %.
SERVING TEMPERATURE - 10° - 12° C.
