The grapes: Chardonnay

Winemaking: The grapes are fully ripe when their wealth is maximum (first fortnight of August) are vinified in white, with soft pressing, settling of the juice cold. The juice (obtained in part with short cold maceration) alcoholic fermentation begins in stainless steel containers, approximately two-thirds of the same is placed in French oak barrels, where it remains for over a year in contact with its lees before being bottled in January of the year following the harvest. The bottle aging of at least three months.
