Fresh and Mediterranean, this white wine expresses a precise personality tied to fruity and floral, round and elegant sensations. Light and informal, it is a perfect white for Mediterranean cuisine.
Denomination: Sicilia DOC Bianco
Grapes: Ansonica (Inzolia) and other native grapes
Production zone: South-weste Sicily, Contessa Entellina estate and neighboring areas
Altitude: from 200 to 400 m a.s.l.
Soils: clayey soils rich in nutrients
Climate: Mild winters, dry and windy summers with strong temperature variations between day and night.
Vineyard: espalier training and spurred cordon pruning
Average planting density: 5,000 plants per hectare
Yield: about 85 quintals/ha
Harvesting: Ansonica - the predominant variety in the blend - was harvested between August 30th and September 7th. The other native varietals were harvested from the end of August until mid-September
Vinification: The grapes are subjected to soft pressing. Fermentation in stainless steel at a temperature of 14-16°C
Aging: in tanks for two months and then at least two months in bottle before release
Alcoholic content: 11.5% vol.
Color: light straw yellow
Nose: delicate aromatic sensations of white flowers (elderberry) and fruity notes among which citrus scents stand out
Palate: delicate with a pleasant finish
Longevity: 2-3 years
Pairings: For these qualities it is suitable to accompany hot or cold appetizers, first courses of seafood. Perfect on boiled fish. Two Recipes: Garganelli with trout fillets. Short pasta, with garlic, parsley and pepper
Serving method and temperature: open at the moment and serve in medium-sized goblets without flaring at 9-11°C
